This is my Roasted Yam (Not-So) Vegan Bowl.
I had found a couple recipes online i wanted to try for vegan bowls, one from Oh She Glows and another from The Lean Clean Eating Machine. The only problem was I had a craving from guacamole and neither of them would do. This is a combination of them with a simple guacamole.
First, I cubed a medium yam, tossed it was 1 tbsp of coconut oil, salt, pepper and italian seasonings (all to taste). Baked that at 400 for 30 mins, tossing every 10 mins.
While that cooked, I sliced some Brussels sprouts (random bag of them I had in my fridge, woot, fridge raid!), tossed them in another tbsp of coconut oil, salt, pepper, and thyme. Baked them at 400 for 10 minutes.
I cooked half a package of quinoa as per the directions, using chicken broth instead of water (thus the not-so vegan).
For the guacamole, I sliced up an avocado, mashed it up, threw in some lime juice, minced garlic, salt, pepper, onion powder, garlic powder, and salsa. I just played with the amounts until when I did a taste test I wanted to shove it all in my face. 
I assembled the bowl by filling a third of the bowl each with the yam, quinoa, and Brussels sprouts, and then putting a generous scoop of guacamole on top. Yum!!!

The Avocado Macaroni and Cheese I made on Tuesday for flashmoblove's birthday supper. I didn't put as much cilantro in it as the recipe calls for because the bunch I got was sad looking, and neither of us really like it anyways, I nearly doubled the garlic though, yum!
I was a little worried it was going to be weird because it seems like you’re basically putting guacamole on mac’n cheese, but the creaminess of the avocado sauce went well with the cheese sauce and the garlic, cliantro, and lime just added a new dimension to the flavour instead of taking away from it. 
I would definitely make it again.

A late update. The day after sending this email, I received an email saying it had been received and was forwarded to the correct people and they took the issue very seriously. Excellent. 

Sunday morning (aka day 4) I was woken up by a phone call from the store manager asking about the incident, if I had been there and wanting to speak to my friend. Since she was out of town, the manager gave me her number and her hours for the next 4 days so she could call when she got back to town.

We were worried this was going to end up being one of those incidents they try to just make it up to you with things, but the manager took it very seriously, said they would talk to everyone working about what happened and what they can do to help keep it from happening again. She was also going to contact the security company and see why the guard failed to act. Since they have security cameras, she also said they would try to get a picture of the man that assaulted her to send to the police.

I think my favourite part though is that apparently the manager was working the day it happened and came in at the end of it and thought it had happened between my friend and the guy she was there with, so she didn’t step in. She didn’t have to tell her this, but she did and she apologized.

So I’m impressed by the way it was handled after the fact. I’m not impressed that it happened or how the staff reacted at the time, but once they were notified it was handled promptly and well. 

Please, if something like this happened/happens to you, say something. It can’t be undone but you can help keep it from happening to someone else.

Never allow loneliness to drive you into the arms of somone you know you don’t belong with.

flashmoblove took me out for Nuburger! And bought me flowers!!!! We also stole a shopping cart so we wouldn’t have to carry the cat litter home.

Took myself out for lunch today, right as I got my eggs Benny, ABBA started playing. I had a lovely chat with my waitress about the awesome playlist she’d chosen.

flashmoblove and I continued our training for Mud Hero, despite both of us not feeling our best. Just under 6k in 50 mins. Woot.

Noticed a scheduling error I had missed because I was sick, and it just sorted itself out (and might’ve started a fight between a couple therapists at work)

Plus it was flashmoblove's birthday so I made her avocado mac and cheese (I reblogged the recipe a week or two ago, it's under recipes) and it was delicious.

I wasn’t feeling well today, so I went home early. So instead of working I watched Supernatural for like 5 hours and then had a milkshake for supper because it was the only thing that sounded remotely appetizing. And I got to see flashmoblove after her being away for TOO long!!! aka like 5 days.

Two things: 

A) I got a call from the store manager of Rexall about the email I had sent about what happened with my friend. She wanted to talk to her personally and get everything straightened out, yay for someone taking action. (I’ll do a separate post about it later)

B) I took my cat to the studio so he could help with the mouse problem. When I got there, B was alone and we ended up watching not just one but two movies. I can’t remember the last time we made it through a whole movie, he always has to go off to work or it’s really late and we fall asleep or something. It was great.
